Ingredients:-
For the Masala Paste:-
2 onions chopped
1 tsp. Coriander seeds
1 tsp. Cumin seeds
1 mace
5 cloves
½” Cinnamon
5 Green cardamoms
3 Black cardamoms
10 peppercorns
2 Bay leaves
1½ cup Curds
A pinch of nutmeg
For the Gravy:-
½ kg. Mutton
3 tbsp. Oil
3 cups of water
1 tsp. Deghi Mirchi powder
1 tsp. Chilli powder
2½ tsp. Chopped ginger
1 tbsp. Chopped garlic
2 tsp. Kewra essence
Salt to taste
Ginger juliennes for garnishing
Method:-
1. Boil the mutton in water and salt until cooked. Keep the stock and the mutton aside.
2. Grind all the ingredients for the masala paste together.
3. Add the Deghi Mirchi powder and the chilli powder and mix well.
4. Heat oil and add the ginger. Saute until it gets brown and then add the mutton and fry for 4-5 minutes.
5. Add the masala paste and the stock and coat the meat well to form a thick gravy.
6. Sprinkle salt, garlic and the kewra water and let the curry simmer for 30 minutes. Garnish with the ginger juliennes and serve.
Bhopali Mutton Korma is ready to eat!
