Fearne Cotton's Happiness Project: Raw Strawberry Cheesecake

Part two of Fearne Cottons Happiness Project Raw Food. Tanya and Fearne cook Tanya’s raw food cheesecake recipe!
Ingredients:
BASE:
150g pitted dates (soaked for 4-6 hours)
115g brazil Nuts
45g desiccated coconut
½ tsp Himalayan Rock salt
CREAM:
260g cashew nuts soaked for 4-6 hours
210g Coconut oil, melted
120ml Lemon juice
140g Xylitol
2tsp Vanilla Extract
STRAWBERRY TOPPING:
600g fresh strawberries
2 handfuls pitted dates
1 tsp vanilla extract
Recipe:
1. Make the base layer by pulsing all the ingredients in a food processor. Transfer this mixture into a cake tin and press it down evenly with your hands to form a crust base.
2. Blend all the ingredients for the cream layer in a food processor, until it reaches a smooth consistency. Pour the cream mix over the crust and refrigerate for 3 hours to set.
3. To make the strawberry layer, place half the strawberries in the blender with the dates and vanilla extract and blend until smooth.
4. Cut the remaining strawberries into quarters and fold them into the strawberry sauce, then pour this mixture over the set cake - add more strawberries to garnish if you wish.
