Ingredients (serves 6-8)
200g (7 oz) or (1+2/3 cups) tapioca starch
150ml (2/3 cup) boiling hot water
1/2 cup coconut meat, diced
1/2 cup roasted peanuts
For ginger syrup:
600ml (2.5 cups) water
100-150g brown sugar
1/4 tsp salt
1/4 cup ginger, julienned
