Every summer, diners line up outside a well-known Seoul restaurant, waiting to get a taste of cold noodles, or naengmyeon. South Korea's iconic summer dish originates in North Korea, as the names of the two main varieties of naengmyeon, Pyongyang naengmyeon and Hamhung naengmyeon, suggest. What makes the North Korean delicacy so popular in South Korea and how did it find its way to the South? We talked to a North Korean defector who once worked at Okryukwan, a Pyongyang-based franchise noodle house to find out more.
