Many people are running to the drug store or beauty counter to buy the latest in anti-aging remedies, some are even trying to turn back the hands of time with surgery. But what if you can keep your skin tight simply by adding the right nutrients in your diet? Well, you can and on this episode of Skinside Out Anisa Noor is going to show you how to make a yummy Thai Carrot Ginger Soup loaded with Vitamin A & E which will help stimulate stimulate collagen production in your skin.
Thai Carrot Ginger Soup Recipe
Ingredients:
2 Tbsp. organic butter
1 pound bag of Baby carrots
2 medium onions
2 medium potatoes
2 pieces of lemongrass, crushed
3 cloves garlic minced
1 1/2 inch Ginger minced
1 bay leaf
1 ½ tsp ground coriander
1 ½ tsp madras curry powder
½ tsp. chili powder
32 ozs vegetable stock
1 can coconut milk
1/2 can coconut cream
1 ½ tsp sea salt (to taste)
1 Tbsp Cane Sugar (to taste)
Fresh coriander for garnish
Steps
- First start by sautéing the onions in the butter until they are translucent.
- Then add the garlic and ginger. Let them cook together for 4 -5 min.
- Add the carrots and potatoes and let the flavors mesh.
- Next add the lemongrass, a bay leaf and the rest of the spices. Cover with a lid as everything softens over low heat.
- Add our vegetable stock, and let simmer for about 30 minutes.
- Turn off heat and add the coconut milk.and coconut cream. Feel free to substitute milk and cream for the coconut milk & coconut cream if you eat dairy.
- Use an immersion blender to blend everything together. Serve with cilantro and a drizzle of avocado oil.
Avocado Mask
Ingredients:
-ripe avocado
-sour cream
Steps:
Simply puree the avocado and whip in the sour cream.
